When traveling abroad, and more precisely in Great Britain, from time to time I liked to enjoy fast food - fish and chips, better known locally as "fish & chips". We had to consider whether such a food culture would appear in Lithuania. "Fish and Potatoes" appeared in the capital at one time, but it went into obscurity waters and thus disappeared from the skies of the capital. After a while, we were pleasantly surprised to see a van selling prepared fish and traditional French fries at the Open kitchen fiesta.
Fish on wheels, what an unexpected and interesting solution is the thought that came to me when I first saw this food van. I saw a documentary about food trucks, which is nothing new in America, but continues to grow in popularity. Such is the food van tradition JAV has existed for several decades and is experiencing a certain renaissance there.
We can only be happy that our entrepreneurs are also moving in step with global trends. We would like to praise the implementers of the idea, who currently offer perhaps the tastiest fish we have tasted so far. We asked Ryk Lio representatives a few questions, which they kindly agreed to answer.
Why the name "Shark"? Does it symbolize something?
From the very beginning, the lookoknow creative team and I thought of a name that would be integrated into the logo. We wanted to abandon the typical names of fish, we needed a short and clear one that would be associated with eating, hunger. Then the word "Ryk" came to Malvina's head, and "Lys" to Ieva, and that's how we became "Ryk Lys". This ambiguous name with its connection to fish and saying "roar until it rains" was just what we were looking for. I really liked the simplicity of the name, the polysemy that gives the user different thoughts and interpretations. Also, the name is easy to remember, which is very important in a market crowded with caterers.
How did you come up with the idea of starting a catering establishment related to fish?
I worked with seafood for a while. Knowing what problems we have with seafood in Lithuania, having reliable suppliers and a good product, it was not difficult to make a decision. The idea of Fish & Chips itself has been brewing for a couple of years. At that time, the necessary experience and opportunities were not yet available. But after the new year, when like-minded people appeared, the idea came to life, and that's when the story of "Ryk Lys" began.
Why did you decide to choose a wheeled "Ryklio" version instead of a stationary one?
There is already a surplus of stationary catering places in Vilnius. I associate Fish & Chips with street food, and a food truck is a very suitable option for it.
Where and how quickly do you get your fish? Are the potatoes from Lithuania?
The fish comes to us from Norway, the Atlantic Ocean. We cannot find a suitable supplier for fries in Lithuania, so we have to use Dutch.
Aren't you afraid that competitors may appear in the near future?
I have no doubt that next year we will have competitors. It often works to your advantage, forcing you to stretch and not stand still. Again, we are assured of the quality of our product, so there is no reason to fear. I always say that if you do something with sincerity, quality and responsibility, you will be ahead.
Where can you usually be found?
For now, our "permanent" location is Upės st. 6, add White bridge. We have our own place there, we are usually there on weekdays, 2-3 times a week. At other times, we go to the city micro-districts for daily lunches, on Fridays you can meet us at "Open kitchen" events both in Vilnius and Beautiful. And autumn and winter, where will you be found during the cold season?
After the summer, we will see if there is a need for such food. Then we will decide whether we will feed you in the winter as well
Are you planning to expand the range?
Fish & Chips will continue to be our main dish, but we will not be limited to that and we will be introducing a new product in the near future, a seafood cocktail consisting of small octopus, small cuttlefish, squid rings and mussel meat and possibly a side dish.
